Blend the blueberries
Add the blueberries to a blender or food processor and blend until completely smooth and liquid-like. If using frozen blueberries, let them thaw slightly first for easier blending.
Sweeten the puree
Pour the blueberry puree into a large mixing bowl and stir in the honey or agave until evenly combined. Give it a quick taste and adjust sweetness if needed.
Create the swirl mixture
Add the vanilla Greek yogurt to the bowl. Using a spatula, gently fold the yogurt into the blueberry puree only 2 or 3 times. Do not fully mix. The streaks of purple and white create the signature swirl effect. Overmixing turns everything lavender. Still tasty, slightly less dramatic.
Fill the molds
Carefully spoon or pour the mixture into popsicle molds, filling each one nearly to the top. Tap the molds lightly on the counter to remove any trapped air bubbles.
Insert the sticks
If your molds include built-in stick slots, insert the sticks immediately. Otherwise, freeze the popsicles for about 2 hours first, then insert wooden sticks once the mixture is partially frozen.
Freeze until solid
Place the molds in the freezer and freeze for at least 6 to 8 hours, preferably overnight, until completely firm.
